Description

Ingredients

  • 4 boneless, skinless chicken thighs

  • 1 lb (450g) baby potatoes, halved

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • ½ cup grated Parmesan cheese

  • 1 tsp paprika

  • 1 tsp dried oregano

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  • Preheat the oven to 400°F (200°C).

  • In a large bowl, combine olive oil, garlic, Parmesan, paprika, oregano, salt, and pepper.

  • Add chicken thighs and potatoes to the bowl and toss until everything is well coated.

  • Arrange chicken and potatoes in a single layer on a baking sheet or oven-safe pan.

  • Bake for 35–40 minutes, flipping the potatoes halfway through, until chicken is cooked through (internal temperature 165°F / 74°C) and potatoes are golden and tender.

 

  • Garnish with fresh parsley before serving.

Notes

  • For extra crispiness, broil for 2–3 minutes at the end.

  • You can substitute chicken breasts if preferred; adjust cooking time accordingly.
